Tonkatsu Sauce:

  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sugar

Instructions:

Chicken Katsu:

  • Season chicken with salt and pepper. Dredge in flour, dip in eggs, then coat with the panko and wasabi pea mixture. Fry in vegetable oil until golden brown. Set aside.

Umami Spicy Aioli: 

  • Mix all ingredients in a bowl until smooth. Set aside.

Sweet and Tangy Pickled Slaw: 

  • Mix cabbage, carrot, and daikon. Whisk vinegar, mirin, sugar, and yuzu (or lime) juice, then pour over the vegetables. Let sit for 30 minutes.

Thai Basil and Culantro Pesto: 

  • Blend all ingredients in a food processor until smooth.

Fried Shallots: 

  • Fry thinly sliced shallots in oil until golden. Drain and sprinkle with salt.

Tonkatsu Sauce: 

  • Whisk all ingredients together until smooth.

Assembly: 

  • Spread Umami Spicy Aioli on both slices of bread. Layer with Pickled Slaw, Chicken Katsu, Tonkatsu Sauce, Thai Basil and Culantro Pesto, and Fried Shallots. Top with the second bread slice.
