Golden Apple Caramel Molten Lava Cake
Ingredients:
Ingredients for Apple Cider Caramel Sauce:
- 2 cups apple cider
- 1 cup granulated sugar
- 6 tbsp unsalted butter, cut into cubes
- 1/2 cup heavy cream, at room temperature
- 1/4 tsp fine sea salt
For the Cake:
- 2/3 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of allspice
- 1/4 tsp baking powder
- 1/4 tsp vanilla extract
- A pinch of salt
Instructions:
Apple-Caramel Sauce:
- Pour the apple cider into a saucepan and bring it to a boil over medium-high heat. Continue to boil until it's reduced down to about 1/2 cup.
- Once reduced, remove from heat and set aside.
- In another heavy-bottomed pan, heat the sugar over medium heat, stirring occasionally until dissolved and a deep amber color.
- Carefully add in the butter cubes, stirring until completely melted.
- Slowly pour in the heavy cream while stirring, until smooth.
- Stir in the reduced apple cider and sea salt until well combined.
- Transfer to a shallow dish to cool to room temperature, then refrigerate for at least 2 hours.
Cake:
- Preheat oven to 425°F (220°C). Grease four ramekins with butter and dust with flour.
- Whisk melted butter and sugar in a bowl. Add eggs one at a time, then vanilla.
- Sift flour, cinnamon, nutmeg, allspice, baking powder, and salt. Fold into the wet mixture.
- Divide half the batter among the ramekins. Add 2 tablespoons of apple-caramel sauce to each, then top with remaining batter.
- Bake on a tray for 12-15 minutes, until sides are firm but the center is soft.
- Let sit for 1 minute, run a knife around the edges, and invert onto plates. Serve immediately.
