Golden Apple Caramel Molten Lava Cake

Ingredients:

Ingredients for Apple Cider Caramel Sauce:

  • 2 cups apple cider
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cut into cubes
  • 1/2 cup heavy cream, at room temperature
  • 1/4 tsp fine sea salt

For the Cake:

  • 2/3 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of allspice
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla extract
  • A pinch of salt

Instructions:

Apple-Caramel Sauce:

  1. Pour the apple cider into a saucepan and bring it to a boil over medium-high heat. Continue to boil until it's reduced down to about 1/2 cup.
  2. Once reduced, remove from heat and set aside.
  3. In another heavy-bottomed pan, heat the sugar over medium heat, stirring occasionally until dissolved and a deep amber color.
  4. Carefully add in the butter cubes, stirring until completely melted.
  5. Slowly pour in the heavy cream while stirring, until smooth.
  6. Stir in the reduced apple cider and sea salt until well combined.
  7. Transfer to a shallow dish to cool to room temperature, then refrigerate for at least 2 hours.

Cake:

  1. Preheat oven to 425°F (220°C). Grease four ramekins with butter and dust with flour.
  2. Whisk melted butter and sugar in a bowl. Add eggs one at a time, then vanilla.
  3. Sift flour, cinnamon, nutmeg, allspice, baking powder, and salt. Fold into the wet mixture.
  4. Divide half the batter among the ramekins. Add 2 tablespoons of apple-caramel sauce to each, then top with remaining batter.
  5. Bake on a tray for 12-15 minutes, until sides are firm but the center is soft.
  6. Let sit for 1 minute, run a knife around the edges, and invert onto plates. Serve immediately.
