Cornbread Perfection Recipe
Ingredients:
- 1 1/2 cups stone-ground cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup buttermilk
- 2 large eggs
- 1/4 cup honey
- 1/2 cup unsalted butter, melted (use brown butter for extra flavor)
- 1 cup creamed corn
- 1/2 cup frozen sweet corn kernels, thawed
Instructions:
Prep:
- Preheat your oven to 400°F (205°C).
- Grease a 9-inch round cake pan or a cast-iron skillet.
Dry Mix: 3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
Wet Mix: 4. In a separate bowl, beat the eggs. Stir in buttermilk, honey, and melted butter until well combined. Mix in the creamed corn and thawed sweet corn kernels.
Combine: 5. Make a well in the center of your dry ingredients. Pour the wet mixture in, stirring until just combined. Avoid overmixing by folding ingredients together.
Bake: 6. Pour the batter into the prepared pan. Spread evenly.
- Bake for 20-25 minutes or until a toothpick comes out clean.
Cool & Serve: 8. Allow to cool slightly in the pan, then slice and serve warm with your choice of butter or honey.
