World Championship Chili
Championship Chili Recipe
Ingredients:
Meat:
- 2 lbs ground sirloin (lean)
Aromatics:
- 2 large onions (finely chopped)
- 1 head of garlic (minced)
Bell Pepper:
- 1 large red bell pepper (diced)
Chilies:
- 3 ancho chilies (dried, seeded, chopped)
- 2 chipotle chilies in adobo sauce (chopped)
Liquids:
- 1 cup beef broth (low sodium)
- 1 cup dark beer (stout or porter)
Tomatoes:
- 1 can (14 oz) crushed tomatoes
- 6 oz tomato paste
Beans:
- 1 can (15 oz) kidney beans (drained, rinsed)
Initial Spice Mix:
- 1 tbsp chili powder
- 1/2 tsp cumin
- Salt, pepper
Second Spice Mix:
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1 tsp coriander (ground)
- 1/2 tsp cinnamon (ground)
Late Spice Addition:
- Pinch of smoked paprika
- Chipotle powder
Sweetness and Acidity:
- 2 tbsp dark chocolate (chopped)
- 1 tbsp apple cider vinegar
Fat:
- 2 tbsp olive oil
Garnishes:
- Sour cream
- Shredded cheddar cheese
- Chopped green onions
- Cilantro (optional)
Instructions:
Brown the Meat:
In a large pot, heat olive oil over medium heat. Add ground sirloin, season with salt and pepper, and cook until browned. Remove and set aside.
Sauté Aromatics and Bell Pepper:
In the same pot, add onions, garlic, and red bell pepper. Cook until onions are translucent.
Add Tomato Paste:
Stir in the tomato paste and cook for a couple of minutes.
Initial Spice Mix:
Add the initial spice mix and cook for 2 minutes.
Chilies and Liquids:
Add ancho and chipotle chilies, beer, beef broth, and crushed tomatoes. Bring to a simmer.
Second Spice Mix:
Stir in the second spice mix.
Add Meat:
Return the browned meat to the pot. Stir well.
Low and Slow Cooking:
Simmer on low, partially covered, for 2.5 hours. Stir occasionally.
Late Spice Addition and Final Touches:
Add smoked paprika, chipotle powder, apple cider vinegar, dark chocolate, and beans in the last 30 minutes. Adjust seasoning.
Serve and Garnish:
Serve with garnishes as desired.
