Ultimate Brioche Burger Buns Recipe
Ingredients:
- 500g (4 cups) bread flour
- 10g (2 1/4 tsp) active dry yeast
- 50g (1/4 cup) granulated sugar
- 10g (1 3/4 tsp) fine sea salt
- 180g (3/4 cup) whole milk, lukewarm (approximately 100°F/38°C), plus more if needed
- 100g (7 tbsp) unsalted butter, softened
- 3 large eggs, room temperature (approximately 150g)
- 1 large egg yolk (approximately 18g)
- 1 egg, beaten with 1 tbsp water for egg wash
Instructions:
- In a large mixing bowl, whisk together the bread flour, active dry yeast, granulated sugar, and fine sea salt. Make a well in the center of the dry ingredients.
- In a separate bowl, whisk together the lukewarm whole milk, softened unsalted butter, 3 large eggs, and 1 large egg yolk. Pour the wet ingredients into the well in the dry ingredients.
- Using a wooden spoon, mix the ingredients until a sticky dough forms. Turn the dough out onto a lightly floured surface and knead for about 10-12 minutes, or until the dough is smooth and elastic. Alternatively, you can use a stand mixer fitted with a dough hook attachment and knead on medium speed for about 7-8 minutes.
- Transfer the kneaded dough to a greased bowl, cover with plastic wrap or a clean kitchen towel, and allow to rise in a warm, draft-free area for 1.5-2 hours, or until doubled in size.
- Gently deflate the risen dough and turn it out onto a lightly floured surface. Divide the dough into 8 equal portions (approximately 110g each). Shape each portion into a smooth, round ball and place on a parchment-lined baking sheet, spaced about 3 inches (7.5 cm) apart.
- Cover the shaped buns with a clean kitchen towel and let them rise for another 1-1.5 hours, or until puffy and almost doubled in size.
- Preheat your oven to 375°F (190°C).
- Gently brush the risen buns with the egg wash, taking care not to deflate them.
- Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown and have an internal temperature of 190°F (88°C).
- Remove the buns from the oven and transfer them to a wire rack to cool completely before slicing and using for your burger.
